Recioto della Valpolicella DOCG 2016
Recioto della Valpolicella is a special wine for us. The grapes we employ for Recioto are trained using the traditionalPergola Veronese system and are more than 20 years old. Their health status must be excellent due to the very long drying process they have to undergo. During fermentation, we favor autochthonous yeasts that are already present in the cellar. Once the natural balance between alcohol and residual sugars has been reached, fermentation stops spontaneously. The aging in wooden barrels respects Valpolicella’s classical
area tradition and is carried out in 25 hL slavonian oak barrels. Recioto is produced only during the best vintages, when the natural drying of the grapes and the fermentation process can guarantee a quality level that meets the high standards imposed by the history and tradition of this wine.
Corvina 55%, Corvinone 25%, Rondinella 20%
The grapes are selected in the vineyard and placed in crates. They are then left in the fruit drying loft and allowed to dry for several months. The wine is left in contact with the grape skins during fermentation. It is pumped over twice a day with a delestage half way through the fermentation process.
